It’s been a while (and some scones)

The last time we spoke was 20 February.

Shame. On. Me.

That was exactly 56 days ago.  I’m back now and hopefully you’re still here too.

So, here I am, trying to make it up to you by sharing my Mum’s Yum Micro(wave) Scones.

Mum’s Yum Micro(wave) Scones:

You’ll need:

  • 2 tablespoons margarine
  • 1 egg
  • 1 cup flour
  • pinch of salt
  • 1 teaspoon baking powder
  • 1/2 cup of cheese – optional
  • milk

Combine all the ingredients but only add a little bit of milk.  The batter shouldn’t be runny.  Remember to spray your microwave-scone-dish with Spray N Cook.  Cook the mixture on High for 2 to 3 minutes.  Let the scones cool off before removing them.  If it’s sticking to the dish, use a teaspoon to scoop out the scones.  Voila!
